A fantastic single cask bottling of Bimber from an uncommon virgin oak cask.
Tasting notes by David Cox (Bimber Super Expert):
Beautiful nose, rich with vanilla custard and tonka bean. The contrast of dark fruits, including blackberries and cranberries, is striking. Rice pudding and nutmeg add to the complexity, with zero alcohol burn on the nose, which is excellent.
The full mouthfeel is complemented by a sweetness from sticky cooked fruits and a slight dryness from quality wood. A floral/herbal note appears on the sides of the tongue, and there is spice on the long finish, but everything else lingers. The spice is much more integrated and subdued than many other Bimbers I've had.
This really is a quality virgin cask Bimber, bottled at the perfect time and certainly one of the better single casks I've had. Dare I say it, it's better than my own cask!
Bimber Distillery
Bimber Distillery was founded in 2015 by Dariusz Plazewski and Ewelina Chruszczyk, Polish natives who emigrated to London in the mid-2000s. Plazewski's father and grandfather had illicitly distilled spirits in communist-era Poland. As an homage to their home country, the name 'Bimber' is derived from the Polish word for moonshine.
The first Bimber whisky came to market in 2019, and since then the distillery has gone from strength to strength, releasing a wide variety of whiskies including the Bimber London Underground series.
The distillery prides itself on using traditional distilling methods, and barley which is grown on a farm local to London.
As English whisky becomes more prominent, it is safe to say that Bimber has established a name for itself in a growing area of the market.
